Besides cheddar, one of my favorite cheeses is co-jack. I am always on the look out for the best co-jack. I found a good one in Cady Creek Farms Gold'n Jack. It's a semi-soft cheese, you could cut it with a butter knife. Cady Creek Farms is located in Wilson, Wisconsin. The farm has been in business for over 100 years. They started in 1908. On the company website you can see pictures of the entire cheese production process. Their Gold'n Jack has a great flavor. I have been turned off by some other really soft co-jacks, that seems to have a funny taste to them. This was wasn't the case. It was creamy without being too rich. I found this half moon-shaped cheese at a Country Market store in Saline, Michigan.
