Elote Creamed Corn

Combine the flavors of the classic Mexican street food into a comforting creamed corn.

Here is what you will need: – 4 ears fresh corn removed from the cob – 1 tbsp mayonnaise – 1 tbsp sour cream – ¼ cup half and half – 1 tbsp stone ground cornmeal – 2 tbsp Cotija cheese crumbled – 2 tbsp cilantro chopped – kosher salt to taste – pepper flakes to taste – 2 tbsp cooking oil – 1 lime optional

When I made this recipe I used Wild Violet Corn on the Cob I found at a Kroger store.

Cotija cheese is similar to parmesan in flavor and is great crumbled on top of the corn.

To remove the corn from the cob I use a bundt pan

Cook the corn first in a hot cast iron pan to brown it.

When the corn is done cooking add in mayo, sour cream, half and half, and cornmeal. Top with cheese and cilantro.

To add some heat, use pepper flakes. I love Flat Iron Pepper Company.
