Most of the year the asparagus you find in stores is from Peru

The peak of asparagus season is in May & June when states like Michigan are harvesting it.

Purple asparagus is pretty, but it turns dark green when you cook it.

White asparagus is imported and has a more bitter flavor.

Store asparagus like a  cut flower in water.

If your asparagus looks wrinkly it can still be roasted as long as it's not moldy.

Don't throw out the tough ends, use it to make a stock for a veggie soup.
