Olive Oil Waffles

How to make waffles using extra-virgin olive oil

  • In a large bow mix together flour, corn starch, baking powder, baking soda, and salt.
  • In a 2 cup measuring cup, add 1 cup of buttermilk. Then stir in the egg, sugar, and oil. Mix well to combine.
  • Add the wet ingredients to the large bowl of dry ingredients. Mix together just until the batter comes together. Allow 5-10 minutes for the batter to sit before making your waffles.
  • Set your waffle iron to it's high setting. Grease the waffle iron with some oil before adding your waffles. You may need to add more if your waffles start sticking.
  • Scoop ½ cup of the batter onto the iron if you are using a regular sized iron. If you are using a mini waffle maker, then do ¼ cup at a time.
  • Once the waffles are brown, remove them. Keep going until batter is all used up.
  • You can keep your waffles in a warm oven set to it's lowest setting so that the waffles don't get cold while you finish the batch.

Notes

  • We like to add spices to our waffles. I would recommend ½ tsp of cinnamon and then use ¼ tsp of freshly grated nutmeg. Ground ginger would be good as well.
  • The corn starch will make for a crispier waffle, but if you are out of it, you can use all flour.
  • If you have a mini waffle maker you should be able to get between 6-8 waffles.
