In a large bow mix together flour, corn starch, baking powder, baking soda, and salt.
In a 2 cup measuring cup, add 1 cup of buttermilk. Then stir in the egg, sugar, and oil. Mix well to combine.
Add the wet ingredients to the large bowl of dry ingredients. Mix together just until the batter comes together. Allow 5-10 minutes for the batter to sit before making your waffles.
Set your waffle iron to it's high setting. Grease the waffle iron with some oil before adding your waffles. You may need to add more if your waffles start sticking.
Scoop ½ cup of the batter onto the iron if you are using a regular sized iron. If you are using a mini waffle maker, then do ¼ cup at a time.
Once the waffles are brown, remove them. Keep going until batter is all used up.
You can keep your waffles in a warm oven set to it's lowest setting so that the waffles don't get cold while you finish the batch.
