Instant Pot Sous Vide Strip Steak

How to cook a New York Strip steak using the sous vide function of the Instant Pot.

Ingredients

  • 6-8 oz New York Strip steak
  • kosher salt to taste
  • freshly ground black pepper to taste
  • 2 tbsp cooking oil for searing the steak at the end

Instructions

  • Liberally season both sides of your steak with salt and pepper.
  • Seal your steak in a bag.
  • Remove the inner pot from the Instant Pot.
  • Place the steak into the bottom of the pot. Add enough water to the pot to bring it above the steak. Find something heavy to place on the steak to keep it submerged if it floats.
  • Remove the steak and your heavy item (if used). Place the inner pot back into the Instant Pot.
  • Hit the sous vide button. Set the timer to 1 hour and the temperature to your desire doneness - I like 138 degrees.
  • Place the lid on and hit the start button.
  • When the Instant Pot comes to temperature it will beep and the countdown will begin. Remove the lid. Add in your steak, making sure it stays submerged in the water. Put the lid back on if you can.
  • When the timer goes off, remove the steak with a pair of tongs.
  • Remove the steak from it's bag.
  • To finish/brown the steak, place a pan over high heat. Cast iron if you have it. Add 2 tablespoons of oil. When the pan is hot, place the steak in for 1 mintue max, then flip and cook for another mintue.
  • Let rest for a couple mintues, then enjoy.

Notes

Cook times
  • Rare - 120 degrees
  • Medium Rare - 130 degrees
  • Medium - 140 degrees
  • Medium Well - 150 degrees
