What is a Teres Major Steak?

Let me teach you about the Teres Major steak and why you should give one a try.

Teres Major is a steak that is cut from the chuck primal (near the head) of the cow

Teres Major is a tender steak that actually rivals the tenderloiin.

You can get them from online butchers like Porter Road.

My favorite way to cook them is sous vide. I vacuum seal them first.

Then cook them for 2 hours at 138 degrees

Then finish in a cast iron skillet.

Always slice against the grain of the meat for tender bites.
