Cut a head of cabbage in half, then shred it and place it into a mixing bowl.
Grate 2 or 3 carrots, then mix them in with the cabbage.
Combine ½ cup of mayonnaise with 2 tablespoons of vinegar. Add salt and black pepper to taste. Set aside. It's best to make the slaw at least an hour in advance, but if you're short on time, it can be served right away.
Cook the shrimp & make the sauce
Place the shrimp in your air fryer in a single layer. Work in batches if there's not enough space. You don't need to thaw the shrimp—just put it straight into the air fryer.
Air fry the shrimp at 400 degrees for 8–10 minutes, or until crispy. You can make the sauce while the shrimp cooks.
To make the sauce, combine ketchup, mayonnaise, garlic powder, and salt to taste. Mix well until the sauce is smooth and evenly blended.
When the shrimp is done, serve the tacos immediately. Place the slaw on the bottom of the tortillas, add the shrimp, and top with cilantro and sauce.
