The great thing about growing baby leaf spinach is that it is ready to harvest very quickly. When you grow baby spinach you can harvest the leaves whenever you like. If you want them on the smaller side, that is totally up to you. The more you harvest, the more that can grow. I harvested mine a few days after I took the pictures you see, so the leaves were a bit bigger.
I planted my spinach around April 10th. I made my first harvest on Sunday, May 29th. So it took 49 days from planting the seeds to harvest. Not bad at all. This gives me plenty of time to get a few harvests in, before I replace the spinach with some french filet beans.
How to Harvest Baby Leaf Spinach (Catalina)
I simply cut off a few leaves on each plant using some kitchen shears. I made sure I left about β
to Β½ of the leaves remaining. Make sure you choose the largest leaves. You can continue to harvest spinach until it bolts, which will happen in hot weather.
