β Why Buy Thin Ribeye Steaks?
Why would you want to buy thin Ribeye steaks in the first place? Well one of the big advantages is that they cook quicker. More of your big will be charred, brown meat. A thinner steak is better to make a sandwich with, more on that below.
π² How Much Do They Cost?
How much does a thin Ribeye steak cost? Does it differ from a standard size Ribeye. Let's look at some prices at a few stores.

I didn't have as many stores to compare to because not all stores carry thin Ribeye steaks. At Costco the thin Ribeyes usually run about $1 more per pound and you only get them as USDA Choice, not Prime.
π³ In a Pan
When I am choosing a pan for cooking a steak I am always going to go with a cast iron skillet. It gets really hot, fast and stays the way, so you can get a very fast sear.
Cook a thin ribeye on cast iron for about 1-2 per minutes per side or until the steak reaches 135 degrees on an Instant Read Thermometer for medium rare. π¬οΈ Air Fryer
Did you know an air fryer can be a great place to cook a steak? You have to choose the right steak. I think the thicker Ribeyes steaks are hard to get right in the air fryer. But something thin works. I first tested this by air frying some skirt steaks. They are a thin steak, so they were the perfect choice.
How do Ribeyes do in the air fryer? I would say about 4-6 mintues total time. A thicker skirt steak took me about 6 minutes in my air fryer. Make sure you pull the steak out of the fridge and let it sit out for 30 minutes before air frying. Again the best way to know if it's done is by checking with an Instant Read Thermometer. We want 135 degrees if you want it medium rare.
π₯ͺ For Sandwiches
One of the best reasons to buy a thin Ribeyes is that they are the perfect thickness for using for a sandwich. Whether you air fry, pan fry or even grill, all those methods will produce a great sandwich. I would dab the steak off a little with a paper towel or napkin before placing on the sandwich so that it doesn't get too much oil on your bread and make it soggy.
