What you need to know before you checkout at the grocery store or market:
One of the reasons I like to buy shallots over onions is that they are smaller. I often don't need a whole huge onion. This saves me on storage space at home and I don't end up wasting anything. Plus I really like the taste.
Try to buy your shallots by the pound instead of in a bag together. That way you can examine the shallots better. They should all be firm with no soft spots.
