    Spinach & Feta Egg Bites Recipe

    Learn how to make egg bites in your Instant Pot with spinach and feta cheese. These egg bites can also be baked in muffin pans in your oven.

    Want to make your own egg bites? Places like Starbucks have made them popular but you can totally do them at home for a fraction of the cost.

    Our family likes to make them using the Instant Pot along with some silicone molds you can find on Amazon. You are going to use the Instant Pot to steam the eggs, producing an egg bite that is soft and moist.

    If you don't have an egg bite mold or an Instant Pot, you can bake the egg bites in mini cupcake pans in the oven. The texture will be different and you will get some browning on the eggs. I would cook the egg bites in a 350 degree oven for 18-22 minutes. The eggs should be cooked to a minimum 160 degrees when checked with a thermometer.

    Either way should be delicious.

    Spanish & Feta Instant Pot Egg Bites

    Make these delicious, easy to make egg bites with baby spinach and tangy/salty feta cheese.

    Equipment

    • Instant Pot

    Ingredients

    • 4 large eggs scrambled
    • 3 TBS feta cheese, crumbled
    • ½ cup baby spinach chopped
    • kosher salt to taste
    • freshly ground black pepper to taste

    Instructions

    • Spray your egg bite mold(s) with a little oil to help them pop out when cooked. Set aside.
    • Crack your eggs into a bowl, and scramble with a fork.
    • Mix in the feta, spinach, salt, and pepper.
    • Fill the molds up with eggs. Don’t fill them more than ¾ full
    • Place the trivet into the bottom of your Instant Pot so it can keep the mold out of the water.
    • Add a cup of water
    • Place the mold into the Instant Pot.
    • Close the lid and set the Instant Pot to 6 minutes of high pressure cooking.
    • Allow for natural release. Should take about 5 minutes.
    • Remove the lid. Allow any excess steam to dissipate before carefully removing the silicone mold from the pot.
    • Turn the mold over pop out the bites over a plate. Serve hot.

    Notes

    This recipe makes 7 bites, Double everything and use a second mold to make 14. You can stack the molds on top of each other in the pot.
