For a while our family went on an egg bite kick. I decided to try a bunch of different flavor combination, see what people liked the most. One of those combos used my favorited Smoked Paprika of all time - the Smoked Pimenton Paprika from Burlap & Barrel. My thinking continued in that if I was using a Spanish spice, I might as well try it with a Spanish cheese and nothing is more Spanish than Manchego!
If you don't have an egg bite mold or an Instant Pot, you can bake the egg bites in mini cupcake pans in the oven. The texture will be different and you will get some browning on the eggs. I would cook the egg bites in a 350 degree oven for 18-22 minutes. The eggs should be cooked to a minimum 160 degrees when checked with a thermometer.
Either way should be delicious.
