    8 Best Substitutes for Brick Cheese (Detroit Style Pizza)

    Do you have a recipe that calls for brick cheese? Maybe you want to make a Detroit style pizza but can't find this cheese? We will give you some ideas on what makes the best brick cheese substitue.

    Whenever I go to the Badger State, I always stock up on Wisconsin brick cheese. It's a wonderful melting cheese that is so delicious on a pizza. In fact it's what you find on many Detroit style square pizzas (I am from Michigan so I know Detroit isn't in Wisconsin!).

    Outside of Wisconsin, it can be tricky to find. I wanted to come up with a list of cheeses that could work instead of brick cheese.

    ♻️ Substitutions

    This is our list of substitutions for mild brick cheese that could work when you can't find brick cheese or just want something else.

    What I am looking for a substitute is a cheese that is mild or not too sharp and is a good melting cheese. For texture, you want a softer cheese.

    • Mozzarella
    • Provolone
    • Muenster
    • Edam
    • Monterrey Jack
    • Tuma
    • Havarti
    • Butterkäse

    Most of these are pretty easy to find, with one exception. I don't see it too often but Tuma cheese is a pretty good match for brick. I actually like it slightly more. I only tend to find it in the metro Detroit area. so it's even harder to find.

    Provolone is a good replacement and if you like smoked cheese it's one that is commonly smoked. Monterrey Jack can vary in sharpness. I once got that I was surprised was super sharp, but it did work well for a cheese sauce.

    Edam isn't too hard to find. Castello brand Edam can be found at Walmart near the produce department. It's round and inside of a red wax. It's firmer than brick and has a mild flavor.

    Muenster is considered to be in the same family as Brick making it a good choice.

    🧀 What Cheese is Most Similar

    When I describe what brick cheese is to people I usually refer to it being like a more flavorful Mozzarella. The texture is pretty identical unless you are talking about a ball of fresh Mozzarella that comes in a brine - that is softer. I have seen Havarti and Muenster labelled as "brick family" cheeses, but I am still giving the nod to Mozzarella.

    🍕 Pizza

    Brick is easily my favorite cheese to use on pizza. Most of the time I don't find it in the places I shop for pizza making ingredients. I am often replacing my desire for it, with Mozzarella. Provolone and Muenster which all have a history of melting on a pizza as well.

    🧱 Aged Brick

    An aged brick is a completely different cheese in terms of flavor. It's super strong with a pungent flavor. So much so that Limburger would considered a substitute. Not for everyone, certainly not for me!

    🔪 Spreadable Cheese

    People want to know if you can use spreadable cheese as a brick replacement. If you are trying to replace an aged brick cheese with something spreadable, it would be a weaker replacement in flavor. I am normally shredding Brick cheese myself, which of course wouldn't work with spreadable cream cheese.
