Enhance Your Corn on the Cob: Discovering the Perfect Salt & Butter Combo

Published: Jun 25, 2024 by Eric Samuelson

Let me share with you the best butter and salt to have on hand this summer whenever you are enjoying one of the best things about the summer time - fresh corn on the cob!!!!

When corn is fresh in season all you really need to complete it is salt and butter. The combo you choose will make a big difference in turning something delicious to something that is mind blowing!

    The Best Salt

For me, it doesn't get any better than Redmond Real Salt. There is salt is taken directly from the mines in Utah. They don't do things to it. They mine it and package it up. The salt is full of different trace minerals that give it a slightly sweet flavor. Also the salt really adheres to food better than other types of salt. So it will stick to your corn and really bring the flavor over the top.

My suggestion is to buy a large bag, the bucket, or 25 pound bag of Real Salt and refill a shaker. I have a shaker I have had for years that I just keep re-filling over and over again.

A bag of Redmond Smoked Real Salt that is cherry wood smoked.

They also have a smoked salt which is the best tasting smoked salt I ever tried. Unlike other companies they actually smoke the salt, not just added liquid smoke to it. It's great on corn and anything you want to add a smoky flavor to.

Below you can hit the play button and listen to an episode of my podcast to hear what makes Real Salt different.

    The Best Butter

This is my challenge to you, spring for the better butter at least once per fresh corn season. That means leaving the store bought butter at the store.

Kerrygold continues to be my favorite butter. It has a richer taste and you will for sure notice the difference once you try it. And it's widely available so it's not hard to find. You can find it in sticks or in a spreadable form but getting the 8oz block is the best value.

Why is it so good? It comes down to the milk. Their cows are grass-fed. They eat a diet that is better suited for them and gives you better flavor. It's a win-win!

Costco has a New Zealand butter and ALDI has an Irish butter that both are very close to Kerrygold and are a better value, so look into checking them out too if you have one of those stores nearby to you.

A collage of different butters including Kirkland New Zealand butter, Tipperary Pure Irish Butter, Delitia Buffalo Milk BUtter, and Carr Valley Sheep Butter

These other butters are great to use as well:

    • Tillamook Extra Creamy Butter
    • Tipperary Pure Irish Butter
    • Amish Roll Butter
    • Delitia Buffalo Milk Butter (water buffalo, not an American Bison)
    • Plugra European Butter
    • Carr Valley Sheep Butter (mildly sweet & creamy)
    • Land O Lakes Extra Creamy Butter

Pro Tip - Always butter your corn before you salt it. That way you aren't brushing off the salt when you butter the corn. The salt will stick better to the butter.

    Adding Pepper

As I said great butter and great salt is really enough. But that doesn't mean I don't like some freshly cracked pepper on my corn. The best I have ever had is from Burlap & Barrel. They offer two different black peppercorns:

    • Zanzibar Black Peppercorns - Known for it's lemony flavor, these peppercorns won a good medal from Monde Selection.
    • Robusta Black Peppercorns - These peppercorns have a classic pepper kick but with bold flavor coming from being allowed to fully ripen on the vine. The name comes from the peppercorns being grown along side Robusta coffee in Vietnam.

Waste Saving Tip - Don't throw out those leftover corn cobs. They can be used in making vegetable stocks along with other veggie scraps. I also use corn cobs to make a stock as a base for my Homemade Fresh Corn Chowder.

Three different colored opened corn on the cobs. The colors are white, yellow, and bi-color.
