What you need to know before you checkout at the grocery store or market:
Remember Panela is considered a fresh cheese, not an aged one. So it's more important to pay attention to the date on the cheese. Usually you will have plenty of time.
Most decent sized cities will have at least one Mexican grocery store. Find one in your area and see what kind of cheese that have. You may find a new favorite. I always pick up some Oaxaca cheese whenever I am in a Mexican grocery store. It's like mozzarella with more flavor.
