Pumpkin is really a squash. So just like pumpkin you can roast the seeds of any type of squash. Some turn out better than others. It's a great excuse to try out all the different types of squash.
My family thinks the Delicata squash makes the best roasted squash seeds. The seeds are smaller in size, so they get crispy faster. When roasted the seeds have a subtle corn flavor. One of my daughters keeps asking me to roast some Delicata squash seeds for her again because she loved them so much.
