Have you ever had a Korean Rice Cake, also known as Tteok Bok Ki? They are either a round cake or sticks. I have seen both at Trader Joe's in the frozen department. In this blog post today we are talking about the stick form.

The cakes themselves don't have much flavor. They are know for their firm, chewy texture. These come with a spicy sauce that brings all of the flavor.

    Why Air Fry

Air frying is an easy, quick way to cook these rice cakes. It's a great option if you aren't feeling up to standing over a hot stove especially on a hot summer day.

One important thing to know about air frying these rice cakes is that you do not want to overdo it or they can come out too chewy and you will feel like it takes forever to chew them. You want them to be pleasingly chewy, not like you are trying to eat a tough steak.

    Tips for Air Frying

The temperature you want to air fry the Tteok Bok Ki is 400 degrees for 6 minutes total. Start by setting your air fryer to 3 minutes. Then toss them and go another 3 minutes.

You don't need to thaw the rice cakes before cooking. They just go directly into the air fryer.

Make sure that you coat the rice sticks in oil. I do that by putting them in a large enough bowl and then drizzled a little oil on them. Toss to coat, so that each piece has a little oil. If you skip this step, you risk drying out the rice cakes and they will be hard to chew.

You can use any type of oil you like. Toasted sesame oil would be a good option in moderation. I used a sunflower oil from Fresh Press Farms. It's cold pressed and extra virgin and has a delightful nutty flavor. It's way better than the sunflower oil you commonly find at Trader Joe's that doesn't have much flavor at all, but still would be good to coat the rice sticks.

As for the sauce itself, it's a gochujang-spiced sauce. It's hot, but not to the extreme. I would taste it first before dumping it all on.

To thaw it, I would place the package in a bowl with some warm from the tab water. It won't take very long to get it warmed up enough to use. I don't think there is any season to microwave it.

    Ingredients

    • 1 bag Trader Joe's Tteok Bok Ki Korean Spicy Stir-Fried Rice Cakes
    • cooking oil to coat the rice cakes

    Instructions

    • Remove the sauce package from the bag. Place it in a bowl with warm water from the tap. Set aside.
    • Place the rice cakes you are going to use into a bowl. Drizzle your choice of oil onto the rice cakes. Stir to evenly coat with a thin layer of oil.
    • Place in the basket of your air fryer, making sure not to crowd the basket. You want them in a single layer to cook evenly. Work in batches if you need to.
    • Set your air fryer to 375 degrees for 3 minutes.
    • After the 3 minutes. give your basket a shake to toss the rice cakes. Now cook for another 3 minutes at 375.
    • Remove and serve immediately with the sauce. Add sauce to taste.
